Indian Spiced Baked Eggplant

Prep Time: 10 minutes

Servings: 4

Ingredients:

2 ½ pounds of eggplant

2/3 cup of clarified butter

1 cup of chopped onions

4 large ripe tomatoes, chopped

4 teaspoons of crushed coriander seeds

Directions:

Preheat oven to 325 degrees F.

Slice the eggplants in half, lengthwise and bake in the oven for 20 minutes or until tender.

Transfer eggplants to a shallow dish and mash.

Heat butter in a skillet over medium heat and add the onions. Sauté until translucent. Stir in tomatoes and eggplant and cook until liquid evaporates.

Remove from heat, transfer to a dish and garnish with coriander seeds.
